I've checked my 2e books, and I couldn't even find a mention of Sanguinia, let alone Mircea. :-/
You might try reading Ian Fordam's "Sanguinia, Survey of a Snow-Bound Land" in Quoth the Raven #30; if I recall correctly, it has 2e stats for Mircea.

I'm old-fashioned like this, but I'd like a game in the style of Sierra's Quest for-games. There's a plot, there's social interaction, but there's room to roam around and look around and plenty of combat, too.

They're very compatible.
Pathfinder 1E has also been described as D&D 3.75; it takes D&D 3.5 and makes a number of tweaks.
If you need an online resource to look at, I recommend d20.pfsrd.org.
