Does Dorgio remember whether the dog's wounds resembled Karim's, or anything else that would make him think the dog's wounds were inflicted by the wolves?

The bulldog's injuries had certainly resembled the bites on Karim, but the dog was hurt much worse than that. You magically healed some of his injuries yesterday, but you hadn't fully healed him. It's pretty safe to say that Dorgio knows of Van Richten, considering that OOC he has points in "Knowledge (Undead Lore)", plus anything that Jon would have mentioned. Of course, Dorgio was too busy with IC prejudices to really think about that. It'll come to him eventually, now that he's settled down.
