I've been looking into these Obedient Dead, and I am having trouble finding out which spells are used in their creation in AD&D 3.5
Can anyone help me out? ^_^

Isn't that supposed to be Meredoth's closely guarded secret?

VRGttWD p87 says, "the necromancer casts gentle repose, veil, and telepathic bond before animation." to create lebentod.
our own Nocturnal Sea Gaz, while not canon, points out that: "...illusion is one of Meredoth's prohibited schools, making veil's effects unavailable to him by any means short of a wish. As the master of Todstein is the original inventor of the lebendtod-creation process, minor salience (also from VRGttWD) is a more fitting spell to serve this purpose."
One might also imagine Meredoth employing or enslaving another wizard to cast the spell for him (possibly even animating a dead one as a minor lich-like creature that could still cast spells).

Cool! Thanks. ^_^
Should one use Animate dead or Create undead to get Lebendtod moving?

Considering it's a template that allows the character to keep class levels, I'd think at a minimum you would need create undead, and probably a higher than the minimum caster level to cast create undead. Compare the lebendtod to some of the alternate undead mentioned from WotC sources here that allow a templated creature retain its previous abilities:
